Cucumber salad with mint

 Cucumber salad with mint (1 person)


½ cucumber, 1 tablespoon 0% white cheese, or 3 tablespoons of 0% fat yogurt , 2 mint leaves, ½ tablespoon lemon juice, salt and pepper. * 2 cherry tomatoes   optional

Preparation (10 minutes)

  1. Wash and cut your cucumber into very thin slices.
  2. In a bowl, put your cottage cheese, a pinch of salt and pepper, finely chopped mint, and lemon juice, and mix well, before adding cucumbers.

* You can decorate with small cubes of cherry tomatoes, cumin or fennel seeds and a twig of mint.
