Preparation: 5 minutes
2 slices of wholemeal bread 1 teaspoon of sweet mustard 2 salad leaves 4 to 6 slices of fat-free smoked duck breast 4 cherry tomatoes Splash of balsamic vinegar for salad.
- Cut the crust from your slices of wholemeal bread then cut in four.
- Spread each piece with sweet mustard then add a salad leaves and cherry tomatoes cut in half
- Add the top of your bread and secure with a cocktail stick
- serve with a small green salad and a splash of balsamic vinegar or a small ramekin filled with a teaspoon of balsamic.
