Mini smoked duck club sandwiches

Preparation: 5 minutes

2 slices of wholemeal bread 1 teaspoon of sweet mustard 2 salad leaves 4 to 6 slices of fat-free smoked duck breast 4 cherry tomatoes Splash of balsamic vinegar for salad.

  1. Cut the crust from your slices of wholemeal bread then cut in four.
  2. Spread each piece with sweet mustard then add a salad leaves and cherry tomatoes cut in half
  3. Add the top of your bread and secure with a cocktail stick
  4. serve with a small green salad and a splash of balsamic vinegar or a small ramekin filled with a teaspoon of balsamic.
